Cranberry Lemon Square

  1. Preheat oven to 350 F.

  2. Prepare base by mixing 3/4 cup of butter with Everythingnice Cranberry Shortbread Mix and press into a 9x9 glass baking dish.

  3. Bake for 20 minutes, remove and set aside for 10 minutes to set.

  4. Prepare filling by combining 4 eggs, 1 cup of white sugar, juice of 3 lemons, zest of 1 lemon, 2 Tbsp. of melted butter, and 2 Tbsp. of flour.

  5. Pour filling over base, put back in the oven and cook for 25-30 min until set.

  6. Chill completely and then cut. You can leave plain or sprinkle some sugar on top. Enjoy!


Oatmeal Apple Raisin Muffins

1. Preheat oven to 400F.

2. Empty cookie mix into bowl, toss 1 diced apple to coat.

3. Melt 1/3 cup of butter or margarine and add 2 eggs (or substitute) and 1 cup of buttermilk (or substitute) and mix well.

4. Add wet ingredients to dry and gently combine.

5. Divide equally into 12 lined or greased muffin tins.

6. Bake for approx. 20 min until toothpick inserted comes out clean.

Egg replacement: If you choose not to use eggs, you can adjust the recipe by replacing the 2 eggs with all of the following:

  • 1/4 cup milk or non-dairy (to replace liquid - add to wet mix)

  • 1.5 tsp baking powder (add to dry before mixing - extra leavening)

  • 1 tsp white or cider vinegar (add to wet mix)


Brownie Cake Pops

1. Prepare Everythingnice Fruit & Nut Brownie Mix as per package directions and allow to cool.

2. In food processor combine brownies and 1/2 cup of cream cheese, vegan cream cheese or 1/2 cup of non-dairy milk until blended.

3. Melt a small portion of white, dark or milk chocolate.

4. Shape brownie mix into balls, dip stick end into a bit of chocolate and stick into a ball. Repeat until all pops on sticks and allow to chill in freezer for 1 hour.

5. Melt remaining chocolate, remove pops from freezer and dip each. We used an egg carton to keep them standing up until the chocolate set.

NOTE: You can decorate with different chocolates as we did, add sprinkles, crushed candy cane bits or skor bits.

NOTE: To make these even more festive, add 1/4 cup rum, Cointreau, Bailey's or other Holiday liquor. If adding the liquor and keeping vegan, leave out the non-dairy milk.

Everythingnice Date Squares

1. Combine dates 3 cups of chopped pitted dates with 1 cup water, 2 Tsp. of orange yest, 2 Tbsp. of orange juice and 2 Tbsp. of brown sugar in saucepan. Bring to boil and simmer on medium for 5 minutes until dates start to fall apart. Allow to cool.
 
2. Preheat oven to 350 F.
 
3. Grease a 9 by 9 baking pan. 
 
4. Prepare Everythingnice Oatmeal Raisin Cookie Mix as instructed. 
 
5. Spread 1/2 of the cookie mixture in the pan and press firmly. Spread date mixture. Top with remaining cookie mix and press firmly.
 
6. Bake for 55 minutes or until oats are golden. Allow to cool fully before cutting into squares.


Nanaimo Bars

BASE:

1. Prepare Everythingnice Fruit & Nut Brownie Mix as per package directions (use an 9 by 13 pan so they are a bit thinner). Bake at 350 F for 25 minutes and allow to cool completely.

MIDDLE LAYER:

2. Combine 1/2 cup of softened butter or coconut oil with 2.5 Tsp. of almond or dairy milk and 2 Tbsp. of custard powder. Whip together adding 2 cups of icing sugar slowly until light and fluffy.

3. Spread over cooled base.

TOPPING:

4. Combine 4 ounces semi-sweet chocolate with 2 Tbsp. of butter in a microwave safe dish. Microwave at 15-20 second intervals stirring between each until combined. Allow to cool.

5. Spread over middle layer.

6. Refrigerate for approximately 1 hour to set.

VARIATIONS:

 Peppermint Nanaimo Bars:

Replace custard powder with a few drops of peppermint extract and green food coloring.


Espresso Nanaimo Bars:

Replace custard powder with 1 Tbsp. of instant espresso powder or instant coffee.

Reminder: These are gluten free as icing sugar and custard powder are generally gluten free however, depending on sensitivity we recommend certified gluten free.

Cranberry Buttertart Bars

  1. Prepare Everythingnice Cranberry Shortbread Mix as per package directions.

  2. Spread evenly in a well buttered or parchment-line 9 by 9 baking dish.

  3. Bake for 20 minutes at 350 F and let sit for 10 minutes.

  4. Combine 1 cup of brown sugar, 4 eggs, 1/2 cup of maple syrup or corn syrup. Pour over base gently.

  5. Bake at 350 F for 35-45 minutes until filling is set.

  6. Cool and cut into bars.


Harvest Crisp

1. Preheat oven to 350 F.

2. Combine Everythingnice Oatmeal Raisin Cookie Mix with 1 cup of melted butter.

3. Place 6 cups of chopped mixed fruit (strawberries, apples, peaches) in a 9 by 12 baking dish.

4. Top with cookie mixture and bake at 350 F for 30 to 45 minutes.

5. Serves 6 to 8 people, can be prepared the night before and baked later.


Candy Cane Brownie Squares

1. Prepare one package of Everythingnice Fruit & Nut Brownie Mix as per directions.

2. Spread into a 9" by 13" parchment lined pan.

3. Bake at 300 F in the oven for 25-30 minutes.

4. Allow to cool completely.

5. Combine 1/2 cup softened butter or vegan margarine, 2 cups of icing sugar and 2 Tbsp. of milk and whip until fluffy.

6. Spread icing on cooled brownie base and sprinkle with crushed candy canes. YUMMY!!!


Ice Cream Sandwiches

1. Bake Everythingnice Oatmeal Raisin Cookie Mix as per package instructions however flatten the cookies a bit more.

2. Allow to cool.

3. Scoop ice cream onto one side of a cookie and then place another cookie on top.

4. Roll the edges in crushed peanuts or sprinkles, if desired.


Oatmeal Cookie Bars

1. Prepare Everythingnice Oatmeal Raisin Cookie Mix as per package directions.

2. Press cookie dough into a 9' by 12' greased baking dish.

3. Score the dough with a knife to make break lines for when cooked (Approx. 2" by 4").

4. Bake as directed and let cool completely.

5. Cut bars.

6. Drizzle with melted chocolate or dip in melted chocolate.


Pumpkin Scones

1.      Preheat oven to 400 F.
2.      Combine one package of Everythingnice Oatmeal Raisin Cookie Mix and 3 Tsp. of  baking powder.
3.      Add 1/2 cup of  softened butter and cream with a fork until it resembles coarse oatmeal.
4.      In a separate bowl combine 1 egg, 1 cup of pumpkin puree and 1/2 cup of  milk.
5.      Combine both mixtures and mix only until dough sticks together. Do not over mix or scones will be tough.
6.      On a parchment lined baking pan, shape the dough into a large round approx. 1 inch thick. Cut into wedges and separate the wedges slightly so they get brown on all sides (yummy crispy bits of goodness).
7.      Bake for approx. 20-25 minutes until a skewer inserted comes out clean.


Quinoa Power Bites

1. Prepare Everythingnice Breakfast Quinoa Mix as per directions except use only 1 3/4 cups of milk.

2. While warm combine quinoa, spice package, 3/4 cup nut butter (peanut, cashew or almond), 1 Tbsp. honey and 1 cup raisins or dried fruit (can be mix of prunes, dates, pineapple, etc.).

3. Once cooled, roll into balls.

4. Roll each ball in 1/3 cup sesame or ground nuts.

5. Refrigerate and enjoy :).
